We want everything to be easy, comfortable, FAST and convenient. When faced with a little work we are ready to quit. That’s too hard, this relationship/marriage is to much work he/she is not what I thought he/she would be. I want a divorce/end the relationship. This job sucks, I hate my boss and the people I work with I quit.

We have escalators and elevators so we won’t have to climb stairs. We have push-button microwaves so we can cook our food in seconds. We have drive-through windows so we don’t have to get out of our cars for our prescriptions, dry cleaning, or tacos. Unfortunately, all this ease and comfort causes us to take the easy way out. When taking the more difficult way just might build something of worth in us.

Whether you know it or not, the best comes out of you when you face hard situations and you experience joy and strength when you overcome them.

Apple, Pineapple & Strawberry Surprise

1 Sweet apple, 7 or 8 fresh strawberries, 2 cups fresh pineapple

Slice the apple ( peel if it is not organic), and peel and slice the pineapple. Run the apple and one cup of pineapple through a juicer. Combine this juice with the other cup of pineapple and strawberries, and puree in a blender.

It’s that time again….Friday!

Wow!! It’s been an entire week since I’ve posted my last commentary. I’m in Atlanta having the time of my life. As promised I at least wanted to put out the recipe for Friday. On Monday, I will resume my posting as scheduled and attempt to post pictures.

Remember, all of my recipes will not consist of pork, beef, chicken or turkey. They will however, consist of fish (sparingly).

Vegetarian Sloppy Joes, these are delicious!

1 bag of morning star ground beef (not real meat of course) 1 can of manwich sloppy joe mix, 1 package of sloppy joe seasoning, 1 small can of stewed tomatoes, sliced dill pickles, hamburger buns, 2 tbspn of butter.

Combine morning star grounds in a non-stick skillet, stewed tomatoes (drain juice from tomatoes), can of manwich and sprinkle a little of the packaged sloppy joe seasoning mix  and simmer on low heat until cooked. The meat is already cooked so it will just need a little heat to it and marinate all the flavors together. Melt the butter in a separate skillet and toast your sloppy joes buns lightly. After you’ve done that, put about 2 to 3 spoonfuls of sloppy joe mix on the bun add the dill pickles on the side and eat until your hearts desire.

I’ll share all my secrets with you (well not ALL) , since January 20, (Inauguration Day) I’ve lost 24 pounds, that was the day I decided I would stop eating meat and take better care of myself, I will however, eat fish (sparingly) and my goal is to eventually stop eating fish as well and become a Chlorophyllin……deep huh? Well surely that will take time, Rome wasn’t built in a day, just wanted to share that with you. Oh, I must admit that I work out like a maniac as well, so this is not about  FAD dieting.

I plan to run the Chicago (Half ) Marathon this year and to lose 25 to 30 more pounds and guess what?……you will be my support system because I will post my training schedule, eating habits, before/after pictures. I will be starting my training Memorial Day weekend.

Greetings:

Because today is Friday and I only post Mon-Fri, I am leaving you with a “healthy nutritious recipe” to cook for yourself, your mate or your family.  People ask me how does exercise, eating healthy  and professional image correlate with each other? My answer is, when an individual image improves their overall confidence will. Unlike doctors (I love and respect them) and don’t negate medicine, however they treat the symptoms. I like to figure out the cause of why we don’t  take care of ourselves the way we should, so you see it’s all relative…….

Recipe #1 Stuffed Baked Potatoes

2 lrg baking potatoes, 3/4 cup of carrots, 1/2 cup broccoli florets, 1tsp. ground corriander,1/8 tsp cardamom,Celtic Sea Salt to taste, 1 cup onion, 3/4 cup bell pepper, 1/2 cup cauliflower florets, 1/2 tsp tumeric, 1/8 tsp cloves.

Scrub and bake potatoes at 400 degrees for one hour or until done. Meanwhile, prepare filling. Steam saute onion, carrots, broccoli and cauliflower until tender, or about 8 minutes. Add bell pepper and spices and continue to saute for a couple minutes longer. Add more water or vegetable soup stock cover and steam until bell pepper is just tender. Stir in sea salt to taste.

When potatoes are cool enough to handle, make a lengthwise cut in the top of each one and remove at least half of the potato pulp, leaving a 1/2 inch rim of potato attached to the skin. Mash out the scooped-out potato, and add to it the vegetable mixture. Lower oven tempature to 350 degrees, stuff the potato shells, place on a no-stick baking dish, cover with parchment paper and bake for 15 to 20 minutes. 

Since January 20, (Inauguration day)  I  became a pescevegetarian (I eat fish sparingly) most of my diet is vegetarian, so all of my recipes are meatless, but DELICIOUS AND NUTRICIOUS!!!

Ahh…the begininng of a new month.

Can you imagine not doing what your’re doing in your life right now, but doing something completely different? Something exciting, fun, even risky, like quitting your job and traveling around the world. Or working part-time and going to school fulltime to study scuba diving or basket weaving. Or owning your own home, business, plane or boat. If  you can imagine it, why aren’t you doing it? I’ll tell you why.  Because the moment you think about it,  you think about all the reasons why you can’t. “How will I pay my bills?”  “Who will take care of my family?” “Where will I get money?” “What will people say?”  Well,  here’s another question for you, How do you ever expect to be happy or at peace if you stay where you are? If  you don’t allow yourself to dream, to dare, to move up , out, forward; how will you ever know what you are really capable of? Look at it this way, what’s the worst that can happen? You could end up right where you started, doing exactly what you are doing.

Oh what the heck,  go for it anyway.

First Day of Spring

Happy First Day of Spring everyone!  Which brings me to my favorite topic nutrition and exercise. As I’m sure all of you know that when an individual image improves their confidence, performance and self esteem improves. I said all of that to say that soon, we will be removing our layers of clothing  and preparing for summer. It’s almost the end of March, so lets get our wonderful bodies in gear and start moving.  I am almost ready……are you?
